Ingredients 

  • 2 Whole Cooked Beets
  • 80g Vital Whey Vanilla
  • 40g 85% Dark Chocolate
  • 3/8 Cup Lowfat Milk
  • 1/4 Cup Coconut Flour
  • 2 Tbsp Organic Pumpkin Peanut Butter

Directions

Serving Size: 1 bar (Makes 8 bars)

1. Mix the vanilla whey and coconut flour together in a bowl. In a separate bowl, stir the milk and peanut butter together.

2. Run the beets through a food processor, and pour the mixture into the wet bowl. Add in the dry ingredients, stir well, and set in the fridge to cool for 30 minutes.

3. Cut into 8 equal portions and freeze until served.

These peanut bars combine what seems to be practically impossible: they are pretty and nutritious. The addition of cooked beets to the mix creates a beautiful pink color in addition to providing the amazing nutrient content of these peanut butter protein bars.

Beets are a root vegetable that are a must for any athlete’s diet. They are an incredible source of antioxidants, vitamin C, folate and fiber. These little red powerhouses contain nitrates which work to open up your blood vessels during exercise, increasing your physical output. They are beneficial for after your workout as well, since they help decrease inflammation, which may reduce muscle soreness.

Pumpkin peanut butter takes the taste of these peanut butter protein bars to the next level. This is a specialty product that may be difficult to find outside of the fall season. But you can always order it online, as many specialty online stores carry it. If you can’t find pumpkin peanut butter, you could always add a bit of pumpkin pie spice or pumpkin puree to give these bars a similar flavor.

This particular recipe uses our Vital Whey vanilla as the protein powder, but cocoa could work as well and will add some extra chocolate-y flavor. I mean, who doesn’t want more chocolate?

For the chocolate drizzle, make sure to use the darkest chocolate you can tolerate for the biggest health benefit. The recipe as written recommends 85% dark, but that may be too bitter for some people.  

These peanut bars are a nutritious treat that can be used as a healthy dessert option or as a pre-workout snack to help flood your body with a dose of exercise-supporting nutrients.
